Nothing Crazy New but….

I made an awesome dinner last night. It is extremely low in calories but incredibly tasty!!!

Totally not paint related but I am still creating over here. Yesterday I took eight Roma tomatoes, put them in a frying pan with olive oil and covered them. Place that on the stove top and cook for a good 25 minutes on medium heat. Once done, I peeled the skins off the tomatoes by literally just pinching the top and pulling the skin off. So easy to do! Then I took a masher and mashed the tomatoes, added a little chicken broth, Parmesan cheese, some Italian seasonings, tomato paste, and a little half-and-half. Yesterday this tasted good, but I stored it overnight in the refrigerator in a Tupperware container and today, the sauce had thickened quite a bit and tasted soooo much better.

When I reheated the sauce today… I added a can of cannellini beans and some cottage cheese and cooked it down. Then added one whole bag of “it’s Skinny” Fettuccine. If you have never tried this stuff/ you are missing out. The entire bag has only 9 calories. No joke!!! And… you don’t boil it. Just add the pasta directly to your sauce from the bag so it get’s hot and absorbs the flavors. Almost no caloires and super fast to prepare!!! We love ity. And no, I am not an affiliate for the brand either. Just plain ole’ good word of mouth sharing.

After heating it up together so that the pasta absorbs the sauce and the flavor, I put that in a dish with some more Parmesan cheese and fresh ground pepper. It was so delicious. Steve went to a historical discussion this evening, so I’m saving this bowl for when he gets home.

Making your own sauce is so incredibly easy. So much easier than you think. But I think one of the biggest secrets, is making it the day before you want to serve it. That gives it plenty of time to thicken up and really have the flavors blend together.
